Ingredients
Crust:
  • 1 1/4 cups almond flour
  • 1/4 cup butter, chilled
  • 1/4 cup Swerve Sweetener or granulated erythritol
  • 1/2 tsp xanthan gum
  • 1/4 tsp salt
  • 15 drops stevia extract

Cheesecake Filling:

  • 12 oz cream cheese, softened

  • 1/4 cup Swerve Sweetener or granulated erythritol

  • 1 large egg

  • 2 tbsp heavy cream

  • zest of one lemon

  • juice of half a lemon (about 2 tbsp)

  • 1/4 tsp stevia extract

  • 3 teaspoons instant coffee powder (optional)

For the whipped cream mixture:

  • 2/3 cup heavy whipping cream
  • 1 ½ teaspoons granulated stevia erythritol blend*
  • ½ teaspoon vanilla extract

*The stevia erythritol blend we use in this recipe is twice as sweet as sugar—One teaspoon of the blend is as sweet as two teaspoons of sugar. If using a different sugar-free sweetener, adjust amount accordingly.
